Whats Cookin Wednesday - Quinoa Salad

Did you know it is recommended that we eat 5-7 servings of fruits and veggies?
{In ONE day}. Everyday.
Sometimes that is easier to manage than others.
But I've been really trying to get a healthful portion of veggies.


This Quinoa salad is a great way to up the veggie intake.
And if you make a big batch, you can have it everyday for lunch without the fuss!
Love it.

Now folks, don't be afraid of Quinoa.
It's a delicious, healthy grain. {it's closely related to tumbleweeds. appetizing much? ha.}
It has a very high protein content. 12-18% in fact. and a complete protein source, which means it contains all of the amino acids necessary for humans to consume because our body doesn't produce them.
It's also high in iron, magnesium and phosphorus. And it's gluten free so easier for our bodies to digest.
All in all, it's sort of a wonder grain.

It can be tricky to find Quinoa at the regular ole supermarket.
If you have a health food store close, try that. It usually can be found in the bulk food section.

Here's the recipe. Make it today!

Quinoa Salad

You'll need:
1 C. quinoa, rinsed
1 T. olive oil
1 3/4 C. water

1 can black beans, rinsed and drained
1 avocado, chopped
2 roma tomatoes, diced
1/2 red onion, diced {i will probably omit this the next time. Not a big fan of raw onion flavor}
1/2 tsp garlic, minced
1 red bell pepper, chopped
1 green bell pepper, chopped

Dressing:
1 T. lime/lemon juice
1/2 tsp. cumin
1/2 T. olive oil
salt, to taste

1. In a medium saucepan, heat oil on medium-high heat until rippling.
2. Add quinoa and toast for 2-3 minutes. Add water, stir once, cover, and simmer for 20 minutes.
3. When quinoa has finished cooking, fluff with fork and stir in black beans, vegetables and dressing. Done!
